First Gluten Free Thanksgiving

It’s my daughter’s first Thanksgiving with celiac disease and we want to try to make it as normal as we can. Typically, she’s really just a turkey, mashed potatoes and rolls kind of girl and we know that most of that will be just fine for her to eat (minus the rolls). I feel that lately she is sad about not being able to eat things that she didn’t even eat before - so we’ll make sure she has most of the options that everyone else has at Thanksgiving. Then she can decide what she likes and would want to eat again. Stay tuned for the after-Thanksgiving recap!

These are the gluten free options that we’ve planned for her:

  • Veggies and Dip - This weekend we found a new dip by Daisy called Creamy Ranch Dip. The ingredients are clean, simple and gluten free. I’ll pair it with mini cucumbers, cherry tomatoes, mushrooms and broccoli.

  • Salad - We’re going to start with a salad that I love from Cameron Mitchell restaurants called the Two Apple Salad. It’s a delicious blend of spinach, apples, cheddar cheese, cherry tomatoes, red onion, bacon, candied pecans and a Sherry vinaigrette. I found the recipe here.

  • Stuffing - We’re going to try Trader Joe’s Gluten Free Stuffing Mix. The picture reminds me of Stove Top stuffing so we’ll see if it’s similar.

  • Green Bean Casserole - We’re going to make these with Gluten Free Cream of Mushroom soup and this recipe from Gluten Free Palate.

  • Gravy - We also picked up Trader Joe’s Gluten Free Turkey Gravy. Gravy is a staple with mashed potatoes and turkey so we are hoping this one lives up to all of Trader Joe’s delicious gluten free options.

  • Rolls - We are going to make these from scratch with a recipe from The Loopy Whisk. The picture looks amazing and she calls them “gluten free cheesy garlic dinner rolls”. You can find them here if you’d like to try them, too.

  • Pumpkin Pie - Katz sells a Personal Size Pumpkin Pie that looks great and gets great reviews. You just have to thaw and cook ahead of time in the oven.

  • Backup Dessert - Just in case the pumpkin pie is a bust, we’ll have a backup chocolate dessert. We’ve tried the gluten free chocolate cake from King Authur, so for Thanksgiving, we’ll want something quick, so we’re going to try the King Authur Gluten Free Fudge Brownie Mix.
